what happens to oil when heated
When oil is heated repeatedly, not only does its color change, but a dangerous chemical change gradually begins inside it. Temperature and particles of the external environment together change the composition of the oil. Triglycerides present in edible oil start breaking down. The double bonds of unsaturated fat start oxidizing and harmful substances start forming in the oil. When the things made from this oil go inside us, then these already bad particles increase the bad cholesterol in our liver and finally when these particles go into our cells, they increase the free radicals due to which the DNA starts breaking. Breakage of DNA in cells can cause cancer. This fragmentation of DNA increases the risk of many types of chronic diseases manifold.
How does the structure of oil get destroyed?
First understand that oil contains fat. There are mainly two types of fats. Saturated fat and unsaturated fat. Fat is made up of carbon, hydrogen and oxygen. Saturated fats are linked together by single bonds. Secondly, there are two types of unsaturated fat, monounsaturated fat and polyunsaturated fat. These contain one or more double bonds. Since the bonds of saturated fat break quickly, they are not very beneficial for us. Due to this, bad cholesterol also starts getting produced more. Whereas unsaturated fats are beneficial for us. However, if it is heated repeatedly and at very high temperatures, its structure also breaks down and it also starts becoming harmful. Sunflower, soybean and safflower oil are generally used in the market which spoils quickly. Although it is polyunsaturated, when the oil is heated repeatedly, its unsaturated bonds are the first to get damaged. Due to this, oxidation starts taking place in the oil. Oxidized oil is very bad. Oxidation means that harmful and unstable substances, which are called aldehydes, start forming in that oil. It contains harmful chemicals like acrolein, 4-HNE and 4-HHE. Research shows that they increase oxidative stress and inflammation by sticking to proteins and DNA. This increases the risk of many diseases including cancer.

What harm does it do?
According to studies, consuming too much aldehyde causes plaque to stick to the arteries. This means that aldehyde will increase high cholesterol which will stick to the arteries and prevent or reduce the blood from reaching the heart. This will increase the risk of heart attack and cardiac arrest. Not only this, it will enter inside the cells and increase oxidative stress in them. As the oxidative stress increases inside the cells, free radicals will increase and they will start breaking the DNA. As soon as the DNA breaks, the risk of diseases like liver, heart, kidney and cancer will increase in the body.
Free radicals are deadly

Dr. Priyanka Rohatgi Said that when oil is heated again and again, more bad fatty acids will start forming in it and free radicals will start increasing significantly. Due to free radicals, the oxidation process in the body becomes very fast. This will cause swelling or inflammation in the cells. This simply means that the affected cells will not be able to do their work properly. The cells which are already healthy will also start deteriorating. As inflammation increases in the cells, the risk of cancer, diabetes, heart attack, high BP, stroke, obesity etc. increases manifold. He said that hydrogen and oxygen from the air come into the hot oil and increase its oxidation. Due to this, the structure of fatty acids starts changing. Due to this change the oxide of fatty acid gets converted into trans fat. We all know that trans fat increases the risk of heart disease, atherosclerosis, heart attack, stroke and paralysis manifold.
