Anti-Diabetic Rice: After getting diabetes, the first thing people say is to stop eating rice. Doctors also say that rice has a high glycemic index due to which it increases the sugar spike in the body rapidly. But now scientists have found a revolutionary solution to this problem. Scientists of CSIR (Council of Scientific and Industrial Research) have prepared a ‘designer rice’, which tastes like ordinary rice, but acts like a medicine as soon as it enters the body.

There are many people who have diabetes but they do not know what kind of slow poison is growing in their body. Diabetes can be controlled through diet. In this, first of all one is asked to give up rice and potatoes but in India no one likes to live without rice. That’s why we eat rice. For such people, CSIR scientists have made such a solution in the rice itself that not only will there be no danger of sugar increasing in this rice but there will also be no shortage of protein in it.
Filled with protein after removing the starch
Scientists from CSIR and National Institute for Interdisciplinary Science and Technology, Thiruvananthapuram, changed the structure of normal rice. Usually vitamins are sprinkled on top of rice, but in this technique the basic structure of rice has been changed. First of all, scientists broke down rice into its basic parts like starch, protein and fiber. Then they were added again in the right quantity in such a way that the amount of starch in it reduced and instead the amount of protein increased. Along with this, elements of micronutrients were added to it.
In this the taste remains the same but the nutrition changes completely. CSIR-NIIST Director C Anandramakrishnan said that this is just like the process of rebuilding a house. Since regular rice contains high amount of starch and this is harmful for diabetes patients. So we took the starch out of it and replaced it with a composition of proteins and micronutrients. The important thing is that in this we did not change the genes but took the help of food processing technology. Due to this, the nutritional structure of rice was rearranged.
Makes the body healthy like medicine
CSIR has shared a report about this on X. According to this report, this designer rice not only fills the stomach, but also helps in keeping the body healthy like a medicine. The best thing is that the taste of this rice and the way of cooking it is exactly the same as what we eat daily, but it is much more powerful from inside. This rice has been specially made keeping metabolic problems in mind. This is not a grain simply sprinkled with vitamins and minerals but a complete reworking of our most basic food structure. Dr. C. Anandramakrishnan, the leading scientist and director of CSIR-NIIST who conducted this research, said that consider it as the architecture of food. You can also understand it this way.
If the rice you are currently eating is a house made of sugar bricks (starch), then the CSIR-NIIST team separated the parts of that house. They removed a large portion of the starch and replaced it with beams of protein. Using food-processing techniques instead of genetic modification, the team took broken rice. The part that usually sells at a lower price. He ground it into flour and added micronutrients like iron, folic acid and vitamin B12 along with protein to it. Then they shaped this mixture back into grains that look, feel and taste exactly like the rice we know.

Rice has a high glycemic index and rice is a staple food. Due to this, blood sugar crosses dangerous levels. This ‘designer rice’ attacks both these problems simultaneously. Its GI is less than 55. It releases energy gradually in the body, due to which the sugar level does not increase suddenly, which is a big relief for diabetic patients. At the same time, it is a powerhouse of protein. Ordinary rice contains only 6–8% protein, this version has more than 20% protein. It removes problems like anemia (blood deficiency) by including iron, folic acid and vitamin B12 directly inside the grains. Dr. Anandramakrishnan says, due to the high protein content, its taste is better than ordinary rice. The most important thing is that for this people do not need to change their culture. You don’t need to shift to expensive quinoa or salad. You can keep eating the same rice you love, only now it will have three times more nutrition.
