When I was a child, when I went to someone’s home to do Vijaya after Puja, the first plate that was handed to me would have Nimki, Gujia and Sandesh. There was a time when before the end of Puja, every house would start making sweets.

Mother and aunts all together would make a basket full of nimki and a plate full of sweets. But now these are past. Not many people can make that basket full of nimki in busy life. In that case, if you have some time and some ingredients at home, you can make delicious nimki in no time.

There are many common nimkis to make jhal mukha after sweets in Vijaya. Also, nimkis are usually served with sweets when visiting someone’s house during puja season. But there are many, who are healthy. Usually they do not want to eat nimki bought from outside. They make nimki at home with few ingredients.

First take some flour, then add salt, oil, soda and a little black cumin to it and knead it well. Make sure that the mayan is done well otherwise the nimki will not have that mushy feeling. Knead the dough and cover it with oil for 1 hour. Then make a big lychee and grind it thinly. With the help of a knife, cut it into small nimki and keep it in a separate container. Heat oil in a wok and fry the nimki leeches one by one. Vyas, much nimki made.
