Siliguri : A popular hill street food is shafale or shabale. It is basically a popular dish of Sikkim. The middle part is filled with meat or cabbage filling. Then the filling is cut into round and crescent shapes and fried in a pan. Sometimes it is fried and cooked in oil.
Usually served with chutney or cheese. Although it is a dish of Sikkim, Dedar is being sold in Siliguri in this shafal. Robin Roy, a resident of Siliguri’s Hatiyadanga, has opened an oil fry shop in his own home. Shafale is being sold there. The price of which is only 5 rupees.
How to make?
Knead the flour well with sugar, salt, baking powder, white oil and then add water and then cover the dough with a wet cloth for 15 minutes. Season the chicken lightly with salt and pepper. Then use a slotted spoon to loosen the cooked chicken pieces.
When the oil is hot in the pan, fry the chopped potatoes, onion, garlic, chilli, ginger, cumin powder, a little turmeric powder, chopped tomato and shake it well. Now add boiled chicken pieces, soybeans or cabbage if you want. Fry it well with chilli powder and butter. Make the filling like this and keep it to cool.
Now cut small pieces from the dough and roll them into balls. Now put the chicken or cabbage in the middle and grate the cheese on top of it. Now fry it like ‘D’ and wrap the edge as shown in the picture. Now fry it in hot oil to make the shafale ready.
Shafale seller Robin Roy said, “I ate Shafale for the first time when I went to Sikkim. Now I make my own. People like it very much.” He also said, “100 to 150 pieces of Shafale are sold in a day.” Coming to eat at Shafale, Kavita Roy said, “I sometimes come here to eat. This Shafale is great to eat.” “
